Mahi-mahi with Avocado, Crabmeat & Jarlsberg

2 tablespoons olive oil
4 Mahi-mahi fillets 6 ounces each
Kosher salt and coarse ground black pepper, to taste
1 ripe avocado
1 cup mayonnaise
1 tablespoon finely grated fresh ginger
½ cup crab meat (claw or lump)
2 teaspoons fresh squeezed lemon juice
4 slices (each 2 ounces) Jarlsberg cheese



In sauté pan over medium high heat, add olive oil. Season Mahi-mahi fillets with salt and pepper. Place bone side down into pan and quickly sear for about 1 minute. Turn and sauté for another minute. Remove to a greased baking sheet.

In a non reactive bowl mix together avocado, mayonnaise, ginger, crab meat and lemon juice. Top Mahi Mahi with avocado mixture and slice of Jarlsberg. Bake in 350o oven for about 10 minutes. Change oven to the broiler setting and broil until Jarlsberg is completely melted and golden-brown. Serves 4.
