JARLSBERG LITE PETAL SALAD–a great way to beat the heat!

And with temperatures across the country reaching into uncomfortable highs, this salad is a great way to eat healthy and stay cool!

Serves 6 

¾ cup spiced or sugared walnuts

Vegetables, cleaned and cut julienne style (about 2-1/2 inches in length):

  • 1 large carrot
  • 1 small zucchini
  • 1 medium red bell pepper
  • 1 small squash
  •  ¼ pound snow peas (if you’d like, blanch the vegetables in boiling water, about 1 minute)

¾ cup shredded Jarlsberg Lite cheese

Mound 2 tablespoons shredded cheese in center of each serving plate. Portion out vegetables equally between plates forming a petal pattern around the cheese. Sprinkle each with walnuts and serve with Ginger Dressing.

Ginger Dressing

In small mixing bowl, whisk together:

2 tablespoons peanut oil
½ cup rice vinegar
1 tablespoon each dry sherry and sugar
2 teaspoons minced ginger
½ teaspoon cayenne pepper
