GRILLED JARLSBERG & CRACKLIN’ CORN WITH CITRUS HERB PORK SANDWICH FROM NEAL CAIN AND BIG FOOD
Owner Neal Cain of Big Food Consulting & Catering was inspired by the upcoming opulent bounty of local delicious corn this summer. “Slow roasting corn kernels and crackling pork skin adds amazing texture; the flavor also complementing the nutty creaminess of semi-soft Jarlsberg. I took 1 tablespoon of roasted and braised Citrus Herb Pork and filled the center of the grilled cheese sandwich. Using local sour pickles from the NYC Pickle Guy, I created a silky relish making a mayonnaise/relish from the pork fat that added a briny tang to the finished product.”
This grilled cheese covers all bases of desired flavor and texture; Sweet, Salty, Crunchy Spicy (Corn), Salty/Briny from Relish, Nutty & Creamy from Jarlsberg & succulent Pork in the center.
BIG FOOD GRILLED JARLSBERG & CRACKLIN’ CORN W/ CITRUS HERB PORK SANDWICH
2 Slices of NY Hand Made Bread
3/4 oz of Sliced Jarlsberg for each slice bread
1 Tablespoon Citrus Herb Pork
1 oz Corn Cracklin’
Thin squirt of Silky Relish
Preheat cast iron griddle for 5 minutes on low flame. Lightly mist spray of unsalted butter & rendered pork fat on griddle. Place sandwich on griddle & allow to crisp 1 side of bread until golden brown. Lightly mist top slice of bread with butter/pork fat and carefully flip. Allow the griddle to warm bread and melt cheese, press down on sandwich with spatula to disperse heat and insure cheese is soft, gooey and properly melted. Slice in half and serve.
